I’m a HUGE fan of pasta salad and an even bigger fan of making meals or sides that can be stretched over a few days. If you’re looking for a really simple lunch idea, this pasta salad is perfect!
- Pasta (Farfalle, bow tie, macaroni, etc.)
- Chopped marinated vegetables (Marinated eggplants, roasted red peppers, hearts of palm, pitted kalamata olives) *
- Chopped parsley
- Crumbled feta cheese
- Cubed celery
- Cubed cucumber
- Italian seasoning (Oregano, thyme, basil)
- Olive oil
- White or red wine vinegar
*Sun dried tomatoes & marinated artichoke hearts would also work really well
Once your pasta is cooked and drained, you can transfer the pasta into a large bowl and begin adding all your chopped ingredients. The final step is to poor you mixture of olive oil, white wine vinegar and Italian seasoning over top. Make sure to coat the salad generously because you don’t want to be left with dry noodles.
And it’s that simple!
