Chocolate Cupcakes with Whipped Cream Icing; Valentine’s Day Edition

Today I made some adorable chocolate cupcakes with pink whipped cream icing for Valentine’s day. I’ve made this chocolate cake recipe many times in the past and it’s always been a huge success amongst my friends and family. I think the reason why it’s always such a big hit is because its incredibly light, fluffy, moist and not too sweet! Typically chocolate cakes are topped off with a very rich, decadent icing but I prefer whipped cream because it adds just the right amount of sweetness without taking over the flavour of the cake itself.

 These cupcakes make the perfect Valentine’s day treat but also make an amazing birthday cake! Who doesn’t love chocolate cake right?

Ingredients

Cake Batter

wet

  • 1 cup of milk
  • 1 cup of strong coffee (cooled)
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 1 tsp. of vanilla extract

dry

  • 1-3/4 cup of flour
  • 2 cups of sugar
  • 3/4 cup of cocoa powder
  • 1 tsp. of baking powder
  • 2 tsp. of baking soda
  • 1/2 tsp. of salt

Icing

  • 1/2 pint of heavy whipping cream (35%)
  • 1/4 cup of icing sugar
  • 1 tsp. of vanilla extract
  • Pink food colouring

Baking Instructions

  1. Preheat oven to 350° 
  2. Grease cupcake or cake tin
  3.  In a large bowl, combine your dry ingredients (I would HIGHLY recommend sifting you flour and cocoa powder in order to avoid clumps in your batter)
  4. In a smaller bowl, combine your wet ingredients
  5. Bake cupcakes for 18-20 min or until you can stick a toothpick in the center and it comes out clean (If you are baking a cake, start with 30 min but I believe it can take up to 40 min to bake completely depending on your oven)
  6. Prepare whipped cream (whip all ingredients together with hand mixer)
  7. Once your cupcakes are finished baking and you’ve let them cool for a few min, you can begin icing them with the whipped cream.

I was able to make 12 very large cupcakes with this batter but, if you only fill the cupcake tins half way, you can probably double that number. To be honest, this was my first time making a cupcake version of this cake and I didn’t realize how large they would be, so I would definitely fill the tins a little less next time!
